Masterful preparation: how to save time before grilling

Everyone has been in this situation before: the guests have arrived, the atmosphere is great, but the charcoal is not quite ready yet, the meat is not marinated, and the grill tongs seem to have disappeared. The good news is that this is not an unavoidable part of grilling—it is simply a lack of organization. With a little planning ahead and a few well-chosen tools, the entire process becomes much calmer and smoother.

Grilling does not start when you light the charcoal. It begins much earlier: during preparation. Experienced grill masters do not necessarily work with more expensive ingredients—they think in systems and know exactly how to save time and energy.

 

Marinating

One of the most common mistakes is starting the marinating process only a few hours before grilling. In most cases, that is simply not enough. For flavors to truly penetrate the meat, at least 8–12 hours are needed, ideally overnight. For example, if you are preparing beef neck or chicken thighs, marinate them the evening before. The next day, you simply take them out of the fridge and place them on the grill.

A vacuum sealer can be a huge help here, as vacuum sealing allows the marinade to penetrate the fibers of the meat faster and more deeply, meaning even half the usual time may be enough. It also prevents odors and leaks in the refrigerator. If you do not have one, the water displacement method also works surprisingly well with a zip-lock bag.

At this stage, it produces stable and even heat. With a little forward thinking, you can also create two separate heat zones. One side can provide stronger heat, while the other stays cooler, giving you better control over the cooking process—especially when preparing thicker cuts of meat.

 

Batch prep: if it can be prepared ahead, prepare it ahead

Not everything needs to be made directly on the grill. In fact, many things work even better when prepared in advance. Different sauces and salads, such as tzatziki, coleslaw, or chimichurri, hold up exceptionally well in the refrigerator and are often even tastier the next day. This saves an enormous amount of time and stress on the day of grilling.

It is easy to fall into the trap of trying to prepare too many things at once. However, that makes it difficult to pay attention to everything, and the overall quality can quickly suffer. A much better approach is to prepare fewer dishes but give them your full attention.
